Bread & Lore is a bread atelier that brings together all grains, especially wheat, with sourdough. Our atelier, serving within Nirvana Cosmopolitan and Nirvana Mediterranean Excellence, uses flour from farmers who produce only through permaculture farming and carefully preserve heirloom seeds
Our flours, coming from clean, fair, and ethical farmers to the stone mill and then to Bread & Lore, meet with salt, water, and time; that is, cold fermentation, that is, sourdough. Our breads, which do not contain any preservatives or additives, promise not only a return to nature but also becoming a part of nature itself.
All our breads are leavened using the cold fermentation method for 18 to 26 hours. Our sourdough supports the digestive system and extends the shelf life of the bread naturally. Our breads can be stored at room temperature for 4 days, in the refrigerator for 7-14 days, and in the freezer for 3 months. Enjoy your meal.
No preservatives or additives can enter the door of Bread & Lore. Only flour, salt, water, and enough time. And, of course, our flavor allies: spices, nuts, fresh and dried condiments. Among them, sunflower seeds, flaxseeds, pumpkin seeds, blue poppy seeds, black cumin, sesame, thyme, rosemary, dried tomatoes, cinnamon, mastic, currants, walnuts, hazelnuts, beets, garlic, olives, and bananas lead the way.
